Lemon, Ginger & Cashew Energy Balls
This is one of my go-to recipes for easy grab and go snacks that are packed with nutrients and energy balls are one of those recipes that never fail to impress! They’re quick to make, keep well in the fridge or freezer, and can easily be customized to whatever you have on hand.
As a holistic chef (and busy mama!), I’m always looking for recipes that feel effortless but still deliver big on nutrition. These lemon-ginger bites check all the boxes: simple, satisfying, portable, and loved by kids and adults.
This recipe calls for freshly squeezed lemon and zest, ginger, cashews + coconut = an absolute match made in heaven. They are flavour-bombs and made with real, simple ingredients and would make for the perfect one-handed snack to bring to your postpartum mama’s!
RECIPE:
▫️1 cup dates (I highly recommend soaking them in hot water for 10 mins beforehand so they are easier to blend!)
▫️1 cup cashews
▫️1/2 cup shredded coconut
▫️1/4 cup vanilla quality protein OR collagen
▫️1 tbsp lemon zest
▫️1/2 lemon juiced
▫️1 tbsp freshly grated ginger
▫️2 tbsp melted & cooled coconut oil
Place all of the ingredients in a food processor or blender and blend until fairly smooth. Use a cookie scoop to make roughly 10-12 balls. If you’re feeling extra fancy, roll the balls in shredded coconut! Keep in the fridge or freezer.
