Everyone has a fond memory involving chocolate chip cookies. Maybe it’s because they’re comforting, sweet, gooey… or maybe it’s because they’re so often attached to memories or traditions. In fact, one of my fondest memories involves a childhood friend and half of a crunchy cookie. Nowadays we’re looking for more of that same comfort (come back, childhood!) without the processed sugars, irresponsible dairy, and other junk loaded in — enter these no-bake chocolate chip cookie balls.
Remember when I told you I like spicy things? Like, I really love them, and one of the best summertime snacks is salsa! Those ripe tomatoes, fresh cilantro, crisp onions… YES. Not only is it always a crowd-pleaser (and crowd-feeder!) but it’s so low maintenance and simple to prepare. I of course like it with lots of heat and a little bit of a smoky flavor, but with some light tweaking this easy salsa can also be made wimp-friendly (mild, I mean!).
Isn’t granola the freakin’ best? I swear I eat it every day. Sometimes I like it with my yogurt for breakfast, and other times it’s great for satisfying my incessant sweet tooth. I typically go for pre-made, gluten free granola options at Whole Foods but at $6.99 a bag those suckers add up. Plus, GF granola is one of the simplest things to make at home because it’s so difficult to mess up. Here, we’re working with low-guilt maple syrup, a few spices, and lots of nuts and seeds to make a magically sweet, protein-packed snack.
Okay, time to get real. I have a confession to make.
Until a year or so ago, I hated sweet potatoes. Despised. Couldn’t stomach the thought of consuming the squishy orange-ness. But in all fairness, my only real experiences with them growing up was an über-sweet casserole with way too many marshmallows and not enough texture. Was I being a brat? Maybe, but I was scarred for life. Fast forward to 2016 — I’ve been promoted at work, I’ve taken up yoga, and I’m running out of ideas for quick, easy meals.
