Okay, time to get real. I have a confession to make.
Until a year or so ago, I hated sweet potatoes. Despised. Couldn’t stomach the thought of consuming the squishy orange-ness. But in all fairness, my only real experiences with them growing up was an über-sweet casserole with way too many marshmallows and not enough texture. Was I being a brat? Maybe, but I was scarred for life. Fast forward to 2016 — I’ve been promoted at work, I’ve taken up yoga, and I’m running out of ideas for quick, easy meals.
Hey all! The time has come – that’s right, the temperatures are inching lower, the days are shortening up, and the leaves are shade-shifting. Autumn is upon us, bringing with it a slew of seasonal fruit and vegetable options. I can’t wait to get all cozy in my comfy pants with a bowl of something warm and filling… maybe a bowl of cauliflower purée with this perfect mushroom gravy on top?
We have the best peaches here in South Carolina. Are those fighting words? Maybe. Are they true? Entirely. Bright, sweet, supple, and juicy, SC peaches are one of those fruits that make you feel light while satiating your sweet tooth. I’ve grown up with them, but it wasn’t until recently that I really appreciated their flavor. Plus, I’m fueling local economy while showing my appreciation for farmers by purchasing their peaches, and we all know that’s a win-win.
I love spicy food. Curry speaks to my soul, and Sriracha might as well be my boyfriend. Even better? Spicy Mexican-inspired foods. I’ve always loved foods with Latin flair because they’re creative, delicious, filling, and packed with plant-based potential. Food is so culturally rich too, with the ability to transport us to dreamy locales in just one bite. Hand me a fork, a knife, and a margarita because these poblanos are no exception!
Remember when you were a kid and you would go to a summer birthday party? You could pretty much always count on a few things:
